We’re entering the season of gratitude and comfort food. I don’t know about you, but I’m thankful for simple, cozy meals that keep little bellies warm and growing bodies nourished!
This month, we’re sharing our Winter Baked BBQ Chicken recipe to give you a hearty meal option that doesn’t require complicated prep time. It’s tangy and filling and serves four to six people (depending on their appetites, of course).
You’ll need to do some light peeling, chopping, and dicing to make this oven-baked dinner come together. So, tell the kids they have about an hour before it’s time to eat and let’s get started!
Preheat your oven to 350 degrees Fahrenheit and grab these things:
First, prepare the chicken, sweet potatoes, red onion, and apple according to the ingredient list above.
To begin assembling the dish, you’ll begin by sautéing the cubed chicken. Add avocado or olive oil to a skillet and cook over medium heat until the outside of the chicken is golden brown. Remove from heat.
Next, prepare a large baking dish by coating the bottom with a bit of additional oil. Non-stick spray works well too.
If your child(ren) like to help, encourage them to get their hands dirty by piling up the chopped sweet potatoes, diced red onion, and diced apple in the dish. Give it a good mix!
Top with the reserved chicken (and all the juices from the skillet).
Still have a little helper nearby? Let your assistant pour the BBQ sauce over top and cover the dish with foil, folding it all around the edges.
Bake for 45 to 55 minutes or until the sweet potatoes are soft when fork-tested and internal temperature of chicken reaches 165 degrees. Serve immediately and enjoy!
