Let’s get started! Begin by preparing your muffin pan using individual liners. You’ll be making 8 to 12, depending on the mix you choose.
Preheat the oven according to the directions on your corn muffin mix and prepare, as directed.
Add a large scoop of mix into each liner, filling less than half full. Add 2 Tbsp. of taco meat and a sprinkle of cheese to each, then top with another scoop of muffin mix. Repeat layers, if able.
Bake as directed (Ex: 15 to 20 minutes). Remove when done and let cool.
Top each taco muffin with a dollop of plain yogurt or sour cream. If you have a helper in the kitchen, let your child spread it around like you would with frosting on a cupcake.
Sprinkle the top with any remaining cheese and add a dash of salt and pepper, to taste.
