Father’s Day Snacks

Father's Day SnacksThe beloved dads and father figures in our lives typically have a knack for adventure, whether it’s enjoying the great outdoors, learning a new skill, or making time for hobbies.

Making memories with the important men in our lives is so important for children of all ages. Dads are usually pretty good at making us laugh and inspire children to work hard and value family.

Fuel up for your next outing with these easy, kid-friendly snack ideas to stay powered up, no matter how you celebrate Father’s Day. They’re also great to keep on hand, all summer long!

On the Go Energy Snacks:
Hard-Boiled Eggs
Cheese Sticks
Edamame
Roasted Chickpeas
Turkey or Beef Jerky

Crispy Broccoli Cheese Rounds, Makes 16

Ingredients:
1 bag frozen broccoli rice (approx. 2 cups)
2 cups shredded cheddar cheese
1 large egg
2 Tbsp. flour
¼ tsp. garlic powder

Directions:

  1. Cook broccoli rice in the microwave according to the package directions. Using a fine strainer, drain and squeeze out as much excess liquid as you can. Set aside to cool.
  2. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  3. In a bowl, combine the broccoli rice, shredded cheese, egg, flour, and garlic powder.
  4. Hand-roll about 16 small balls with the mixture and place them evenly on your baking sheet. Press them with your hand to flatten them out a bit.
  5. Using the center rack, bake for 15 minutes (or until they start to turn brown). Then flip them over and bake for another 8 to10 minutes.
  6. Serve warm!

Apple Cinnamon Energy Bites, Makes approx. 24

Ingredients:

2 cups old fashioned oatmeal
¼ cup ground flaxseed
¾ tsp. cinnamon
½ cup almond or sun butter
¼ cup plus 1 Tbsp. maple syrup
1 tsp. vanilla extract
1 pinch of salt
1 cup (not packed) grated apple (about 1 medium)

Directions:

  1. In a large bowl, stir together the oats, flaxseed, and cinnamon.
  2. In a smaller bowl combine the almond or sun butter, honey, vanilla extract, and a pinch of salt.
  3. Pour over the oat mixture and stir until everything is well-mixed.
  4. Stir in the grated apple.
  5. Scoop the mixture into tablespoon-sized portions and use your hands to roll/squeeze it into a ball. (Slightly wet hands will help keep the mixture from sticking to you.)
  6. Store energy bites in an airtight container in the refrigerator. They will keep for 3 to 4 days.

Smore’s Energy Bites, Makes approx. 15

Ingredients:

1 cup old fashioned rolled oats
1/3 cup finely crushed graham crackers
2 Tbsp. chia seeds
1 pinch salt
½ cup creamy peanut or sun butter
¼ cup maple syrup
½ tsp. vanilla extract
¼ cup mini chocolate chips
¼ cup mini marshmallows

Directions:

  1. In a large bowl, combine oats, graham crackers, chia seeds, and salt.
  2. Add the peanut or sun butter, honey, and vanilla. Stir until combined and the mixture is moist.
  3. Gently stir in the chocolate chips and marshmallows.
  4. Roll the mixture into small balls, about 1 to 2 Tablespoons per ball. Store in an airtight container for up to 2 weeks in the refrigerator.
